Medium, mature doesnt melt as much as I like
I prefer either extra mature or vintage, if really desperate to buy cheese then mature is probably what I would resort to. Mild or medium I wouldn't touch
If the Irish sort is the mild one, so be it. That is the cheddar I add to my foods, Shepherds Pie and tacos to name but a few.

mild if it's melted like cheese on toast, but mature for cheese and biscuits or with olives
